Crisphead, also known as iceberg or head lettuce, is one of the most widely used lettuces, full of nutrients like folate and vitamin K.

Crisphead lettuce has a crunchy texture and mild flavor that lends itself to salads and sandwiches. It pairs well with other vegetables and most salad dressings.

You can also use its sturdy leaves as a replacement for tortillas in wraps.

Chicken-Paneer Lettuce Wraps

Healthy & crunchy lettuce wrapped around tasty chicken, paneer and vegetable filling. Happy taste-buds and super happy tummy. A guilt-free lunch or dinner on its own.

Ingredients
  

  • 1 Iceberg lettuce head big
  • 500 gms chicken thighs boneless and skinless cut into tiny pieces(1/4 inch)
  • 250 gms paneer cut into tiny pieces(1/4 inch)
  • 1 green capsicum finely chopped
  • 1 red capsicum finely chopped
  • 2 onions, medium sized finely chopped
  • 2 tomatoes, small finely chopped
  • 4 tbsps coriander finely chopped
  • 3 spring onions finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • ½ tsp garam masala
  • salt to taste
  • 3 tbsps ghee
  • 2 tbsps oil

Instructions
 

  • Take a bowl and add the finely chopped chicken, ½ tbsp ginger-garlic paste, salt, ½ tsp red chili powder, ¼ tsp garam masala, ¼ tsp turmeric powder and mix thoroughly. Set aside for 20 mins.
  • Take a non-stick pan, place it on medium flame, add the ghee and fry the marinated chicken. Dry roast the chicken approximately 7-8 mins , adjust the salt and spices as per taste and set aside.
  • Place a wide non-stick pan on medium flame, add oil, once hot add the chopped onions and fry until golden brown. Add the ¼ tsp turmeric, ½ tsp red chili powder, ½ tbsp ginger-garlic paste and sauté for 1 min. Add the chopped capsicums and fry for 3 mins on high. Add the chopped tomatoes and salt and fry until the tomatoes turn mushy and moisture dries out.
  • Add the chopped paneer and ¼ tsp garam masala, half of the chopped coriander and mix everything well. Let it fry for 2-3 mins. Add in the roasted chicken, mix well, adjust the seasonings and switch off the flame. Garnish with rest of the coriander and spring onions.
  • Separate the lettuce head into single wraps and serve with the chicken-paneer-vegetable filling.

Notes

Tips:
To keep crisp head or iceberg lettuce fresh, refrigerate it in a sealable bag with a damp paper towel.
