Take a bowl and add the finely chopped chicken, ½ tbsp ginger-garlic paste, salt, ½ tsp red chili powder, ¼ tsp garam masala, ¼ tsp turmeric powder and mix thoroughly. Set aside for 20 mins.
Take a non-stick pan, place it on medium flame, add the ghee and fry the marinated chicken. Dry roast the chicken approximately 7-8 mins , adjust the salt and spices as per taste and set aside.
Place a wide non-stick pan on medium flame, add oil, once hot add the chopped onions and fry until golden brown. Add the ¼ tsp turmeric, ½ tsp red chili powder, ½ tbsp ginger-garlic paste and sauté for 1 min. Add the chopped capsicums and fry for 3 mins on high. Add the chopped tomatoes and salt and fry until the tomatoes turn mushy and moisture dries out.
Add the chopped paneer and ¼ tsp garam masala, half of the chopped coriander and mix everything well. Let it fry for 2-3 mins. Add in the roasted chicken, mix well, adjust the seasonings and switch off the flame. Garnish with rest of the coriander and spring onions.
Separate the lettuce head into single wraps and serve with the chicken-paneer-vegetable filling.
