  • 1 large onion finely chopped
  • ½ cup mint leaves chopped
  • ½ cup coriander leaves chopped
  • 1 inch ginger chopped
  • 4 green chilies chopped
  • 3 cloves
  • 1 inch cinnamon stick
  • salt to taste
  • oil for deep frying

Instructions

  • Soak the black-eyed beans at least for 2 hours
  • Wash and drain the beans and keep aside
  • In a small blender jar, grind together the ginger, green chilies, cloves and cinnamon to fine paste without adding water, add this paste to big mixing bowl and set aside
  • Grind the beans coarsely either in a blender or food processor with out adding water, make sure not to grind to a fine paste
  • Add this ground beans to the mixing bowl with masala paste, add the chopped onion, mint and coriander leaves, salt to taste and mix everything well. Check salt and adjust accordingly
  • Heat a pan, add oil for frying the vadas, let it become hot. Meanwhile take a small zip lock bag or a plastic sheet, wet it with water, take a lemon sized ball of dough and flatten it on the plastic sheet/zip lock bag(about 1/4 inch thick), make a hole in the center. Carefully invert this flattened vada onto your hand and drop it into the hot oil. Let it come up on its own and flip after its cooked on one side and fry completely or until golden brown on both sides. Take out onto a paper towel. Repeat the same until the dough lasts and serve hot with the peanut chutney.
